Peanut Butter Cookies
A gal at work brought in these cookies made with only four ingredients but had no flour or milk products. I had to try them! This recipe makes about 18-24 cookies, depending on what size cookie you make.
Preheat oven to 350 degrees.
Ingredients:
1 cup sugar
1 cup peanut butter (crunchy or creamy, depending on your personal preference)
1 beaten egg
1 teaspoon vanilla
Combine all in a bowl. Using a tablespoon or scoop, roll dough the size of a half dollar between your hands to make a ball. Place the cookie balls on a baking sheet covered with either a silicone baking mat or parchment paper. No grease necessary. Flatten each ball in a crisscross pattern with a fork, dipped in granular sugar.
Bake for 10-14 minutes, depending on the size of your cookies and your particular oven. These don’t brown much. Store in airtight container.
